Ostrich Steak Starter

Ingredients

For 6 people

  • 3 Klein Karoo Ostrich Steaks (± 100g each, 20-25mm thick)
  • 2 tablespoon(s) Olive Oil
  • 1 pinch(es) Sea Salt and Coarsely Ground Black Pepper
  • 2 tablespoon(s) oil
  • 1 large onion, diced
  • 2 cloves of garlic, finely chopped
  • 0.5 cup(s) water
  • 1 x 410 gr can whole peeled tomatoes
  • 1 cup(s) ketchup
  • 0.5 cup(s) Worcestershire sauce
  • 0.75 cup(s) fruit chutney
  • 0.25 cup(s) brown sugar
  • 1 teaspoon(s) Tabasco sauce
  • 1 Onion
  • 0.25 teaspoon(s) garlic
  • 1 bay leaf
  • 625 mL tomato sauce
  • 125 mL vinegar
  • 187.5 mL Worcestershire sauce
  • 500 mL Soya sauce
  • 1 cup(s) water

Directions

Method:

  1. Season both sides of the steak with salt and pepper.
  2. Place in the refridgerator for 1 hour.
  3. Remove from the fridge and allow to sit at room temperature for another hour before cooking.
  4. Heat the olive oil over a high heat until it starts to smoke. Pat steaks dry and brown for 3-7 minutes depending on how you like them done.
  5. Remove the steaks, transfer to a platter and cut into thin slices. Serve immediately.
  6. Serve with monkeygland sauce.

Monkeygland Sauce

Please note: These quantities will vary accordingly if you adjust the number of people to be served in the ingredient section above.

  • 2 tablespoons oil
  • 1 large onion, diced
  • 2 cloves garlic, finely crushed
  • ½ cup water
  • 410g can whole peeled tomatoes
  • 1 cup ketchup
  • ½ cup Worcestershire sauce
  • ¾ cup fruit chutney 
  • ¼ cup brown sugar
  • 2 tablespoons vinegar
  • 1 teaspoon Tabasco sauce

Method:

  1. Heat oil in a heavy bottomed pot and sauté the onions and garlic until soft.
  2. Add the remaining ingredients and simmer for 30 minutes.

  • 1 onion
  • ¼ tsp garlic
  • 31.25ml salt
  • 3.75ml pepper
  • 1 bay leaf
  • 625ml tomato sauce
  • 125ml vinegar
  • 187.5ml Worcestershire sauce
  • 500ml Soya sauce 
  • 1 cup water

Method:

  1. Bring the onion, bay leaf, salt, pepper, garlic and water to the boil.
  2. Then add the rest of the ingredients and leave to simmer.
