Served with garlic and black pepper croutons.

Compressed Watermelon with Seared Ostrich

Ingredients

For 4 people

  • 1 part(s) Watermelon, sliced 1 inch thick and trimmed into squares - four portions
  • 1 pinch(es) Salt
  • 1 pinch(es) Pepper
  • 1 handful(s) Caraway seeds
  • 1 dash(es) Olive Oil
  • 4 part(s) Klein Karoo ostrich fillets
  • 180 mL Olive oil
  • 40 mL Cumin, ground
  • 30 mL Coriander, ground
  • 4 handful(s) Sprigs of rosemary (for brushing)
  • 1 part(s) Ciabatta bread - torn into little croutons
  • 1 part(s) Butter
  • 1 part(s) Lemon zest
  • 1 part(s) Garlic, crushed
  • 1 pinch(es) Seasoning
  • 1 pinch(es) Black pepper

Directions

 

Method:

  1. Place the 4 watermelon squares into vacuum bags and season with salt, pepper, caraway seeds and olive oil. Vacuum at 100% and seal.
  2. Leave in refrigerator overnight.
  3. Roll the ostrich in cling film to shape (don't season) and leave in refrigerator overnight.
  4. Mix the olive oil, cumin and coriander together.
  5. Heat a pan or grill and drizzle with oil.
  6. Brown fillets to rare - brush with the spiced oil using rosemary sprigs.
  7. Cook to medium rare.
  8. Let the meat rest for a 3 -4 minutes.
  9. Slice and brush with oil and seasoning

Croutons:

  1. Fry the croutons in butter until golden and crisp
  2. Remove from the heat and add the zest, garlic and seasoning. Set aside.

Build:

  1. Cut the watermelon into squares and top with the cooled meat.
  2. Top with croutons.
